I have been eating lots of chicken lately because it is on my NoOodle diet. I like creating recipes that do not require a lot of clean up so here is my one pan Chicken Fajita NoOodle recipe.
One box of Chicken NoOodle meal Starters with broth
1/2 white onion sliced in thin strips
1 jalapeno pepper( deseeded and chopped) if you don't like spicy leave it out.
2 plum tomatos deseeded and chopped
4 raw chicken thighs ( skin on)
1 ounce chopped cilantro
1 ounce low fat yogurt
1 ounce sliced avocado
salt and pepper to taste
Preheat oven to 400 degrees. Use a skillet that can go from stove top to oven. Place on high high until skillet is nice and hot. Add chicken thighs skin side down. Sear chicken on both sides until brown ( about 5 minutes on each side). Add all other ingredients and place pan in oven and cook for 10 minutes. Turn all ingredients once so everything is combined nice and them cook for another 15 minutes. I then transfer recipes into a bowl and place chicken thighs on top. Then sprinkle the cilantro on top, add the dollap of sour cream and slices of avocado. This is a hearty dinner that serves two people and it is so yummy!
