Today was the perfect Sunday with my family. We mostly just hung out around the house. In Chicago the weather has been brutally cold these days so it makes you really want to stay inside. I did have a session with Aaron my trainer at 9:30 this morning so I kept to my rules to live by. I made this for lunch today, It can’t be more than 200 calories and it was so good and so satisfying. Here is my recipe:
1 clove of garlic minced
1 cup fresh spinach
1 roma tomato chopped
1 tablespoon olive oil
1/2 cooked chicken cubed
1/2 teaspoon crushed red pepper
Salt and pepper to taste
In hot skillet add olive oil, then garlic and tomatoes, toss for a two minutes, add spinach and NoOodles toss for a couple of minutes then add in chicken red pepper salt and pepper to taste. If you want add some grated parmesan cheese for extra flavor.
This recipe took me five minutes from start to finish. Fast, fun, & Healthier just like I like it!
