Last night I made my favorite Mediterranean salad as a side dish with dinner.This salad is great served fresh but also it is great as leftovers. Arugula and NoOodle have the ability to get better over time.
1 tomato infused NoOodle ( drain and broth discarded and chilled)
1 cup arugula
2 ounces fire roasted red peppers
2 ounce sliced grape tomatoes
1 ounce chopped kalamata olives
1 ounce pine nuts
1 ounce goat cheese
2 tablespoons olive oil
1 teaspoon balsamic vingar
1 teaspoon honey
salt and petter to taste
In large mixing bowl layer NoOodles, Arugula, peppers, tomatos and mix in olive oil, then vinegar and honey and season with salt and pepper, toss all ingredients together. Place on plate and sprinkle on pine nuts and goat cheese. Enjoy!
