Here is a great recipe that I tried today for the first time. Our tomato Risotto Soup starters are the perfect base for whatever your feeling like eating at the time. Today I wanted warm soup but I also wanted some leafy greans. Here is my combination of the two. Total cooking time was about 15 minutes and so healthy. I don't think the greens and avocado could be more than 75 calories so this is about a 175 calorie lunch that was fast... fun... and healthier. Chef Terri
I Box of Tomato NoOodle Risotto Soup Starters
2 cups ( 1/3 fresh arugula, 1/3 fresh basil, 1/3 fresh spinach)
1 garlic clove, mashed
pinch of salt
pinch of red pepper
1 ounce avocado ( smaller cubes)
On High heat place all contents together ( except for avocado). Bring to a boil and then reduce heat and let simmer for 10 minutes. Pour into bowl and add avocado pieces on top. Let cool for 5 minutes than indulge!
